Healthy (ish) Comfort Food

Hey guys! I don’t know about you, but I’m at that point in my New Year’s resolutions where I’m craving food that’s good for the soul and good for the body. Like if The Eagle and Public Greens had a baby ya know?

So I wanted to share a couple of recipes that fit the bill, just incase you’re there too!

-Million Dollar Zoodle Spaghetti

This recipe was my first experiment with zucchini noodles and let me tell you, it did not disappoint. I was a little timid about trying zoodles because they require extra effort and I was not confident that my husband would be down with the veggie substitution. But now this cheesy dish is not only enjoyed but requested in our home. A couple of tricks of the trade- just use whatever cheese you have on hand, you don’t need the fancy stuff. And make sure the zoodles are nice and drained before mixing everything up!

-One-Pan Mexican Quinoa

I make this dish a couple of times a month because it’s so easy and makes plenty to have on hand for lunches throughout the week. If I’m being honest, the phrase “one-pan” in a recipe adds major bonus points for me. Eat it with shredded cheese, sour cream, and tortilla chips to spice it up!

-Southwestern Chopped Chicken Salad

Claiming that this is a healthy meal might be a stretch but it has the word salad in it so I’m going with it. Anyways, I’m a sucker for a southwestern chicken salad so I went on a search for one to make at home and this one is sooooo good and a crowd favorite. I make my own dressing for this so if you’re trying to be Whole 30 compliant then you can always go that route!

-Detox Immune-Boosting Chicken Soup

You can’t talk comfort food without talking chicken soup as far as I’m concerned. This recipe is perfect for all of us battling through some January sickness and I’ve made it a couple times this month already. Don’t be intimidated by the long name, this is a pretty basic soup recipe that calls for rotisserie chicken- removing a couple of steps for you. One tip- if you’re a Costco member, they have awesome rotisserie chicken for only $5! I nix the chickpeas (because I’m allergic) and I add gluten-free penne noodles! I love the texture and taste, and they makes me feel a tad healthier than regular noodles ;)

-Twice Baked Chicken Fajita Sweet Potatoes

I’ve been all about sweet potatoes lately and love that this recipe uses them for the main course instead of just a side! If you guys have never made twice baked potatoes or at least tried them, do yourself a favor and try out this recipe. Twice baked potatoes alone will change your life but add chicken fajitas to the mix and it’s a whole new ball game!

-Turkey Burger Lettuce Wraps

I made these for dinner last week and O M G so good. I’m going to make them again tonight! I tried to be a little healthier so I swapped the bun for a lettuce wrap, but I couldn’t resist adding a slice of Colby jack cheese! I also topped the burger with guac for some extra flavor. They were super tasty, easy to make, and the hubs loved them as well!
